Xiehuang tangbao, or crab-roe soup dumpling, is the must-try morning dish in Yangzhou. It is often served with a straw which allows you to pierce the thin skin of the dough, suck the fresh and fragrant crab content from within, and will leave you with a sweet and enjoyable aftertaste.
