Located in the global golden coffee-growing belt, Pu'er in Yunnan is a core, representative coffee-producing region in China, with large-scale planting bases, a sophisticated industrial system and outstanding bean quality. Honored as the "Capital of Chinese Coffee", it boasts a century-old coffee planting history and sets a high-quality standard for domestic specialty coffee.

In this video, Li Yanqing, professional coffee consultant at W·Vally Coffee Manor, demonstrates the standard full pour-over process for classic Pu'er Catimor coffee, drawing on her professional experience to reveal the outstanding flavor of Chinese Yunnan coffee.

In this tutorial, Li uses finely washed Catimor coffee beans from Pu'er's core producing areas, light-roasted with exquisite precision to fully preserve their original fruity aroma and delicate acidity. Compared with dark-roasted coffee, light-roasted Catimor features a purer, fresher, more layered flavor, making it the perfect choice for pour-over brewing and an authentic tasting experience.

The video presents every step of preparation, from precise weighing and even hand grinding to utensil rinsing, eliminating off-flavors and ensuring stable, high-quality coffee extraction.

For extraction, Li uses a mature and widely applicable brewing formula for washed Pu'er Catimor suitable for both household and commercial use. Following a ratio of 20 grams coffee beans to 300 g water and a precise 25-30 second blooming time, the method fully activates the rich aroma of the coffee beans.

Water is poured slowly in an outward spiral motion for balanced extraction, which highlights the bean’s signature fresh citrus notes and bright clean acidity while keeping bitterness low. This user-friendly and professional recipe enables even beginners to brew well-balanced, aromatic premium pour-over coffee with ease.

After extraction, uniform blending and moderate cooling unify the flavor and deliver a mild, smooth taste. The finished Pu'er pour-over coffee features distinctive mountain citrus notes, a lively fruity acidity and a pure aroma, reshaping public perceptions of Chinese domestic coffee.

Endowed with superior natural conditions and a mature industrial chain, and empowered by dedicated local coffee practitioners like Li Yanqing, Pu'er coffee has become a popular specialty with unique oriental flavors, serving as a prestigious flavor ambassador for China on the world stage.
