Salt merchant and Huaiyang cuisine

Thanks to its strategic location on the Grand Canal, Yangzhou was historically China's salt trade hub. It was the salt merchants, with their extravagant, exquisite lifestyles, that brought Huaiyang cuisine to a climax in its development.
