Xiaomian, another Chongqing specialty, is a vegetarian noodle dish that is cheap and easy to prepare.
In the Chinese language, Xiaomian means small noodles. However, in Chongqing, "xiao" does not refer to small or tiny, but is rather a term of endearment, indicating locals' love for the noodle that is cooked with as many as 13 to 15 kinds of condiments.
Locals' love for Xiaomian is similar to that of hotpot. The dish is served at almost every restaurant, with the owner's secret recipes.
