
Bolanzi is a potato-based dish common in North China's Shanxi province, mostly made of potatoes or cabbages, flour and sorghum flour. It is cooked by peeling the potatoes, shredding them, then steaming the mixture of potatoes with flour and stir frying it with other vegetables.
