Coming a close second on the list of must-eat Xingjiang dishes foods is Uygur pilaf. Some people spell it “pollo”, “polau” or “pilaf” but it’s all the same thing – a mixture of carrots, peppers, rice and lamb cooked in a large amount of oil.
Although more and more restaurants are now serving it for dinner, it usually takes a while to prepare such a dish so in most restaurants it is only served for lunch. Also, such a high-calorie meal is better enjoyed in the daytime.
