Sanmenxia Fried Dough Twist (大宫麻花/Dagong Mahua) tastes sweet and soft, and is high in nutritious value. Based on the traditional methods, a chef named Cai Tiangui developed the cooking skill and invented today's fried dough twist. In 1960, former premier Zhou Enlai recommended the twist when he inspected Sanmenxia.
