Although not really a standard meal in itself, the famous Xinjiang lamb kebab is an essential part of the cuisine. It can be added to almost any dish that you order at a Xinjiang diner.
Xinjiang lamb kebabs are nothing more than lamb meat on a stick, usually with alternating meat and fat pieces on the skewer. With cumin and pepper sprinkled on top, it is cooked over a coal or wood fire.
